Gargle. Dab concealer on a bad mood. It’s now or never: you must wear the thing you are too afraid to wear. The shoes need not be comfortable. The underpants need not be modest. Lemongrass lime cordial
½ oz.
Tonic water
2oz.
Soda water
1 oz.
Combine all ingredients, except tonic water, in a mixing glass with ice. Stir until chilled. Strain into a rocks glass with fresh ice. Top with tonic water and garnish with a twist of lime.
To make the lemongrass cordial, place sugar (2 cups), water (1 cup), lemongrass (1 stalk, roughly chopped) and lime zest (1 lime, zested) into a small saucepan and bring to the boil, stirring to dissolve the sugar. Reduce the heat and simmer for 2-3 minutes then remove and cool completely. Stir in the lime juice (¾ cup) then pass the cordial through a fine sieve to remove the lemongrass and lime zest.
